Ground Turkey Taco Lettuce Wraps

Ingredients

    Tomatoes, Finely diced

    Ground turkey breast

    Salsa

    Red onion, Finely chopped

    1/2 Cup
    Yellow onion, Finely chopped

    Taco seasoning package
  8. 8
    1/2 Cup
    Red bell pepper, Finely chopped
  9. 9
    1/4 Cup
    Cilantro, Finely chopped
  10. 10
    1/2 Cup
    Shredded Cheddar Jack Cheese

    Bib lettuce leaves

Steps

  1. In a large non-stick skillet over medium heat, combine 2 tablespoons olive oil, bell pepper, and ½ cup yellow onion. Sauté for 3-4 minutes, or until onions become translucent.
  2. Add ground turkey to the skillet; cook for 5-7 minutes, or until turkey is cooked through.
  3. Add taco seasoning and salsa, stir well, and reduce heat to simmer. Cover and let turkey taco mixture simmer for 5 minutes.
  4. When ready to serve, fill each lettuce cup up with equal amounts of ground turkey mixture, top with shredded cheese, tomatoes, red onion, and cilantro.
